Prepare the Ground Beef: In a large bowl, combine the ground beef, roasted poblano and jalapeño peppers, salt, pepper, garlic powder, and onion powder. Mix well. Divide the mixture into 20 equal portions and form into thin patties.
Prepare the Cream Cheese Filling: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, diced jalapeños, garlic powder, onion powder, salt, pepper, and cooked bacon. Mix well.
Cook the Burgers: Preheat your grill or skillet to medium-high heat. Place a raw patty on the cooking surface. Top with a spoonful of the cream cheese mixture, then cover with another raw patty. Seal the edges to secure the filling. Cook each side of the burger 3-4 minutes
Make the Raspberry Chipotle BBQ Sauce: In a saucepan, combine all the sauce ingredients and bring to a boil. Reduce heat and simmer for 20-30 minutes, or until thickened. Let cool before using.
Make the Fried Onions: In a large bowl, combine the flour, cornstarch, and seasoned salt. Dredge the onion slices in the flour mixture, shaking off excess. Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Fry the onion slices in batches until golden brown and crispy, season with salt. Drain on paper towels.
Assemble the Burgers: Toast the hamburger buns. Place a cooked burger on each bun. Top with raspberry chipotle BBQ sauce, shredded cheddar cheese, and fried onion crisps.
