Bacon Me Goaty Sticky Toffee Pudding

For the Sticky Toffee Pudding: 1 cup dates pitted and chopped 1 tsp baking soda 1 cup boiling water 1/2 cup butter softened 3/4 cup brown sugar 2 eggs 2 cups all-purpose flour 1 tsp baking powder 1/2 tsp salt 1 tsp vanilla extract For the Goat Cheese Swirl: 4 oz goat cheese softened 2 Tbsp heavy cream 1 Tbsp honey For the Bacon Toffee Sauce: 6 oz bacon cooked crispy and chopped 1 cup heavy cream 1/2 cup brown sugar 4 Tbsp butter 1/4 tsp salt 1 Tbsp bourbon optional For the Bacon Crumbles: 4 oz bacon cooked crispy and crumbled
Prepare the Sticky Toffee Pudding: Preheat oven to 350°F (175°C). Grease and flour ramekins.
In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 10 minutes.
In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Stir in the date mixture.
Prepare the Goat Cheese Swirl: In a small bowl, combine the softened goat cheese, heavy cream, and honey.
Blend until smooth and creamy.
Assemble the Pudding: Pour half of the sticky toffee pudding batter into the prepared baking dish.
Spoon the goat cheese mixture over the batter.
Pour the remaining pudding batter over the goat cheese layer.
Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
Prepare the Bacon Toffee Sauce: In a saucepan, combine the chopped bacon, heavy cream, brown sugar, butter, and salt.
Bring the mixture to a simmer over medium heat, stirring occasionally.
Cook for 10-15 minutes, or until the sauce has thickened slightly.
Stir in the bourbon (if using).
Assemble and Serve: Let the sticky toffee pudding cool slightly.
Pour the bacon toffee sauce over the pudding.
Sprinkle the crispy bacon crumbles over the sauce.
Serve warm.
