Ingredients

For the Sticky Toffee Pudding:

  • 1 cup dates pitted and chopped
  • 1 tsp baking soda
  • 1 cup boiling water
  • 1/2 cup butter softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

For the Goat Cheese Swirl:

  • 4 oz goat cheese softened
  • 2 Tbsp heavy cream
  • 1 Tbsp honey

For the Bacon Toffee Sauce:

  • 6 oz bacon cooked crispy and chopped
  • 1 cup heavy cream
  • 1/2 cup brown sugar
  • 4 Tbsp butter
  • 1/4 tsp salt
  • 1 Tbsp bourbon optional

For the Bacon Crumbles:

  • 4 oz bacon cooked crispy and crumbled

Instructions

Prepare the Sticky Toffee Pudding:

  • Preheat oven to 350°F (175°C). Grease and flour ramekins.
  • In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 10 minutes.
  • In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, then stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Stir in the date mixture.

Prepare the Goat Cheese Swirl:

  • In a small bowl, combine the softened goat cheese, heavy cream, and honey.
  • Blend until smooth and creamy.

Assemble the Pudding:

  • Pour half of the sticky toffee pudding batter into the prepared baking dish.
  • Spoon the goat cheese mixture over the batter.
  • Pour the remaining pudding batter over the goat cheese layer.
  • Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.

Prepare the Bacon Toffee Sauce:

  • In a saucepan, combine the chopped bacon, heavy cream, brown sugar, butter, and salt.
  • Bring the mixture to a simmer over medium heat, stirring occasionally.
  • Cook for 10-15 minutes, or until the sauce has thickened slightly.
  • Stir in the bourbon (if using).

Assemble and Serve:

  • Let the sticky toffee pudding cool slightly.
  • Pour the bacon toffee sauce over the pudding.
  • Sprinkle the crispy bacon crumbles over the sauce.
  • Serve warm.
