This innovative sticky toffee pudding elevates the classic dessert with a savory-sweet twist. The rich, moist pudding is infused with the sweetness of dates, while a creamy goat cheese swirl adds a tangy counterpoint, mimicking the goat cheese filling in the savory appetizer.
The bacon toffee sauce, a decadent blend of smoky bacon and sweet toffee, complements the savory elements, creating a harmonious balance. Finally, the crispy bacon crumbles provide a textural contrast and reinforce the savory inspiration. Bacon Me Goaty Sticky Toffee Pudding
Ingredients
For the Sticky Toffee Pudding:
- 1 cup dates pitted and chopped
- 1 tsp baking soda
- 1 cup boiling water
- 1/2 cup butter softened
- 3/4 cup brown sugar
- 2 eggs
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
For the Goat Cheese Swirl:
- 4 oz goat cheese softened
- 2 Tbsp heavy cream
- 1 Tbsp honey
For the Bacon Toffee Sauce:
- 6 oz bacon cooked crispy and chopped
- 1 cup heavy cream
- 1/2 cup brown sugar
- 4 Tbsp butter
- 1/4 tsp salt
- 1 Tbsp bourbon optional
For the Bacon Crumbles:
- 4 oz bacon cooked crispy and crumbled
Instructions
Prepare the Sticky Toffee Pudding:
- Preheat oven to 350°F (175°C). Grease and flour ramekins.
- In a bowl, combine the chopped dates and baking soda. Pour the boiling water over the dates and let it sit for 10 minutes.
- In a separate bowl, cream together the softened butter and brown sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the date mixture.
Prepare the Goat Cheese Swirl:
- In a small bowl, combine the softened goat cheese, heavy cream, and honey.
- Blend until smooth and creamy.
Assemble the Pudding:
- Pour half of the sticky toffee pudding batter into the prepared baking dish.
- Spoon the goat cheese mixture over the batter.
- Pour the remaining pudding batter over the goat cheese layer.
- Bake for 40-50 minutes, or until a toothpick inserted into the center comes out clean.
