Ingredients

  • 1 cup water
  • 1 cup granulated sugar
  • 2 stalks lemongrass trimmed, tough outer layers removed, and roughly chopped or smashed
  • 1- inch piece fresh ginger peeled and thinly sliced

For the Spritzer:

  • 1.5 cups mixed berries fresh or frozen, thawed if frozen
  • 4-6 Tbsp fresh lime juice from 2-3 limes, plus more to taste
  • Chilled sparkling water or club soda for topping
  • Garnish: Fresh berries lime slices, lemongrass stalks, or mint sprigs

Instructions

Make the Lemongrass Ginger Simple Syrup:

  • In a small saucepan, combine water, sugar, chopped lemongrass, and sliced ginger.
  • Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Reduce heat to low and simmer for 5-7 minutes to allow the flavors to infuse.
  • Remove from heat, cover, and let steep for at least 15-20 minutes (or longer for a stronger flavor) until cool.
  • Strain the syrup through a fine-mesh sieve into a jar or bottle, discarding the solids. You’ll have extra syrup for future drinks!

Prepare the Berry Base:

  • In a pitcher or large bowl, lightly muddle the mixed berries to release their juices.

Combine & Mix:

  • To the muddled berries, add ½ cup of the prepared lemongrass ginger simple syrup and the fresh lime juice.
  • Stir well to combine.
  • Taste and adjust sweetness or tartness with more syrup or lime juice as needed.

Assemble the Spritzers:

  • Fill 4 serving glasses generously with ice.
